After the slaughtering process, the carcass is driven to the pre-cooling or cooling rooms and the beef is either packed or moved to the deboning line for further processing. Our intelligent traceability system follows the slaughtering into the deboning line, where every piece of meat is barcoded, carrying data such as animal ID, slaughter batch, slaughter date, farmer ID, classification and more. Any additional cut is barcoded and linked to the primal barcode. Hatziioakimidis deboning lines start from simple two-level lines that automatically carry the portions for packing and serve workers. The speed of the belt determines the capacity of the line.
